M&M (Michael and Marie)

Well last night I had Michael and Marie over for dinner. I really enjoy cooking, so it was quite fun having them over and planning dinner. I haven’t seen them for quite some so it was good to catch up with them.

I wouldn’t have normally posted this, but Marie wanted to see it published, so here are the details of the dinner just for Marie.

    All I can say about last night is.. WOW!

    The dinner was aboslutely delicious from entree to desert and the company was fantastic! Thanks heaps for a great night boys! I had heaps of fun and I’m looking forward to our next invitation!

    (And glad to hear you’re not hungover today Pat!)

    Hey Patrick, Looks delish! Andy said you had issues with the texture, and that you weren’t entirely happy - a little bit fluffy? I had that on a recent chocolate tart I made with my fantastic new silicone tuppaware tart tin - I consulted the expert (my mother) - apparently this happens when the oven is a little bit hot - slow and low is the way to go : )
    We’ll have to do bring your own dinner party soon where everyone provides a course now that we know you are up for the challenge…..

    Recipe for Pikelets
    ===============

    2 cups SR flour
    1 cup milk
    1 teaspoon vanilla
    1/2 cup sugar
    1 egg

    Combine sugar, vanilla and the egg in a mixing bowl. Whisk until fluffy. Fold in the flour and the milk. Heat a pan until hot and add margarine or butter. Spoon the mixture into the pan to make four 10cm diameter pikelets at a time. Wait until the bubbles stop collapsing and then turn.
